Cabbage-Apple Slaw

I just love this recipe created by one of my former interns. It is delicious, easy to make and most importantly, full of vibrant colors. I recently took it to our annual family reunion and it was a hit. Better yet, my husband who loves the traditional coleslaw thought this had awesome flavor. So let’s get started with the ingredients.
 
Ingredients
2 cups red cabbage
1 cup green cabbage or lettuce (I chose green leaf lettuce)
1 to 2 apples (any kind you prefer)
2 to 3 large carrots
3 green onions
Small handful of fresh cilantro
 
Ingredients for the dressing
2 Tbsp. olive oil
2 Tbsp. honey
2 Tbsp. apple cider vinegar
1 Tbsp. lime juice
Salt
Pepper
Dash of cayenne powder
 


Instructions:
  1. Wash vegetables and apples.

 
  1. Shred or cut cabbage and lettuce into fine strips.

 
  1. Grate carrots. Finely chop carrots, green onions, cilantro and apples. (I like to keep the apples larger for color contrasting purposes).

 
  1. In a smaller bowl, combine dressing ingredients and whisk until mixture is even.

 
  1. Combine all vegetables and apples into a bowl. Pour dressing over and toss until all dry ingredients are coated with dressing.

 
  1. Enjoy this fabulous and colorful slaw with any of your grilled entrée’s this summer season.
