Avocado Baked Eggs

This recipe is easy and delicious. With only four needed ingredients you will have a quick and healthy breakfast or snack for two.

Ingredients:

  • 2 eggs
  • 1 avocado
  • ½ lemon, squeezed
  • Sea salt and pepper (as desired)

Preparation:

  1. Preheat the oven to 425°F
  2. Scoop out the inside of the avocado leaving ½ inch rim
  3. Break egg onto avocado (don’t worry if the whites spill over, just clean the sides)
  4. Place on baking sheet
  5. Sprinkle lemon juice, salt and pepper over both avocado halves
  6. Bake for 15 minutes or until the yolks set
  7. Enjoy!
