Chicken Salad

This chicken salad tastes great on its own, or can be used in wraps, sandwiches or salads for a light, tasty meal! You can use the leftover chicken in a hearty chicken noodle soup.

Ingredients:

  • ½ rotisserie chicken
  • ½ cup red grapes
  • ¾ cups low fat mayonnaise
  • 1 tsp yellow mustard
  • 1 medium purple onion
  • 1 medium stalk celery
  • ½ cup chopped walnuts
  • 1 tsp garlic powder
  • 2 dashes black pepper

Preparation:

  1. De-bone and remove skin from chicken.  Discard.  Chop remaining chicken into 1 inch pieces.
  2. Add diced onion, celery, grapes and walnuts to the chicken and mix together.
  3. Combine mayonnaise, mustard, garlic and pepper together, and add to the chicken mixture until well combined. Chill in the refrigerator until cold, and enjoy!
