This chicken salad tastes great on its own, or can be used in wraps, sandwiches or salads for a light, tasty meal! You can use the leftover chicken in a
hearty chicken noodle soup.
Ingredients:
- ½ rotisserie chicken
- ½ cup red grapes
- ¾ cups low fat mayonnaise
- 1 tsp yellow mustard
- 1 medium purple onion
- 1 medium stalk celery
- ½ cup chopped walnuts
- 1 tsp garlic powder
- 2 dashes black pepper
Preparation:
- De-bone and remove skin from chicken. Discard. Chop remaining chicken into 1 inch pieces.
- Add diced onion, celery, grapes and walnuts to the chicken and mix together.
- Combine mayonnaise, mustard, garlic and pepper together, and add to the chicken mixture until well combined. Chill in the refrigerator until cold, and enjoy!
