Dad's Low Sodium Chili

Ingredients:

  • 1 bag dry small red beans
  • 1 small onion, chopped
  • 1 lb ground beef
  • 1 46-oz can (no salt added) tomatoes
  • 1 ¼ tsps cumin
  • 1 tsp garlic powder
  • 1 tsp ground celery seed
  • 1 tsp Durkee low salt chili powder
  • Crushed red pepper to taste
  • ¼ tsp black pepper

Preparation:

Soak beans in 6 cups of water over night. Alternatively, bring to a boil for one minute, cover and let rest for one hour. Drain beans, cover with 6 cups of fresh water, and bring to a boil over high heat. Lower heat and simmer for 2 hours. In another pot, sauté hamburger until no longer pink. Drain fat. Mix cooked hamburger with tomato juice, tomatoes, and spices. Add the meat mixture to the beans and simmer for 30 minutes.
