Zucchini Pizza

Ingredients:

  • 6 large baby zucchini
  • 1 cup tomato sauce
  • 1/2 cup part skim shredded mozzarella cheese
  • 1 tbsp basil
  • 1 tsp ground oregano
  • 1/2 tsp black pepper

Preparation:

  1. Cut zucchini in half, lengthwise, then again width-wise. Scoop out centers with spoon. Be careful not to go so far down that you poke a hole in your zucchini!
  2. Preheat the oven to 420°F and link baking sheet with parchment paper. Sprinkle zucchini with pepper. Place on baking sheet. 
  3. Spoon about 1 1/2 tablespoons of tomato sauce into hollowed zucchini and sprinkle on cheese. You may add basil, oregano, or any other toppings of choice. 
  4. Bake 10-20 minutes. Depending on how watery the zucchini is, time will vary.
  5. Serve while hot, and enjoy!
