Ingredients:

  • 2 zucchini
  • 2 yellow squash
  • 2 sweet potato
  • 1 eggplant
  • 7 sliced portabella mushrooms
  • 4 tomatoes
  • 4 cloves garlic (minced)
  • Red bell pepper
  • Black pepper
  • 2 Tbsp. Olive oil
  • Cheese (provolone, Swiss or blue cheese)
  • Oval baking dish

Preparation:

  1. Slice zucchini, yellow squash, sweet potato, egg plant and mushrooms about 1/4 inch thick.
  2. In an oval baking dish, layer the vegetable. Start with a whole mushroom to help keep everything up and layer one vegetable after another working your way around the dish into the center.
  3. Heat 2 Tbsp. olive oil over medium heat.
  4. Add garlic and half of the red bell pepper (finely diced) and black pepper to taste.
  5. Once the garlic and red pepper are fragrant, drizzle over the top of the veggies
  6. Lightly top with your favorite cheese bits (provolone, Swiss or blue cheese).
  7. Bake at 400 degrees until cheese is golden brown and vegetables are tender (about 25-35 minutes).
