Strawberry Banana Flax Muffins

Ingredients:

  • ½ cup brown sugar
  • 2 egg whites, lightly beaten
  • ½ cup unsweetened applesauce
  • 2 small ripe bananas, mashed (about ¾ cup)
  • 1 tsp. vanilla
  • 1 ½ cup whole wheat flour
  • ½ cup ground flax
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 cup strawberries, diced into bite-sized pieces
  • Ground cinnamon, for sprinkling

Preparation:

  1. Preheat oven to 350° and spray a muffin tin with nonstick cooking spray.  
  2. Whisk together brown sugar, egg whites, applesauce, bananas, and vanilla.
  3. In a separate bowl, combine the dry ingredients.
  4. Add dry ingredients to the wet and mix gently just until combined, being careful not to over mix.
  5. Fold in the strawberries.
  6. Using a ¼ cup measure, scoop batter into prepared pan. Sprinkle each muffin with cinnamon and bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. 
  7. Cool on a wire rack.
