Breakfast pita pockets



  • 4 100 percent whole wheat pita pockets
  • 6 eggs
  • 1 cup fresh spinach
  • ½ cup diced turkey
  • ½ tsp black pepper
  • Non-stick cooking spray


  1. Heat pita pockets until warm; approximately 30 seconds in microwave, or 10 minutes at 200°F in oven.
  2. Place non-stick skillet on a burner at medium heat. Grease pan, add spinach and diced meat, stirring occasionally until spinach is wilted and meat heated.
  3. While spinach and meat cook, scramble eggs in bowl and add pepper. Add to skillet on the stove.  Continue to stir them until cooked. Separate scrambled eggs into four portions.
  4. Open sliced pita pockets. Stuff one portion of scrambled eggs into each pita. Enjoy!
Feel free to add diced onion and peppers, cheese or any additional toppings you like!
